– clementime or orange slices with animal crackers
– hummus with carrot, cucumber and celery sticks, apple slices
– yogurt smoothie or protein shakes
– fruit muffins (see recipes for blueberry and berry burst Cherrios
muffins) and
small yogurt
– half a bagel with cream cheese and fruit jelly
– cheese slices or stick, whole wheat crackers with blueberries or
– fruit and cheese kabobs – cut off the pointy end of the stick and cut
the cheese for fun into interesting shapes
– hard boiled egg with half a bagel
– whole wheat bread with honey
–  lightly buttered, no butter or kettle corn mixed with dried fruit
(can add a few chocolate chips for fun!)
–  ham, cheese roll up with plum
– whole wheat frozen waffle toasted, spread with cream cheese and add
raisins or jam – cut into strips
– home made granola bars made with oatmeal (sh! don’t tell the kids!)
– apple sauce and muffin with a slice of cheese
– banana or zucchini bread with cream cheese and a yogurt drink
– pumpkin bread with a side of raspberries or blueberries

Simple recipes

Blueberry Muffins

1 3/4 cups flour (you can substitute whole wheat flour as well or do
half white and half wheat)
1/2 cup white sugar (you can use 1/4 cup)
3 tsp baking powder
1/2 tsp salt
1 cup blueberries
1/2 cup (1 stick) unsalted butter, melted
1 cup milk
1 egg

In a large bowl combine all the dry ingredients and the blueberries. In
a small bowl combine the melted butter, milk and egg. Add wet
ingredients to dry ingredients and mix gently until just combined. As a
rule you should never beat muffin batter so you will have light and
fluffy muffins. Fill muffin tins 3/4 full and bake at 350 degrees F for
15-20 minutes. Makes 12 muffins.

Berry Burst Cherrios Muffins

Fresh bananas paired with strawberries is a flavor combination kids are
sure to like!

Makes: 12 muffins

2 cups Berry Burst Cheerios® strawberry cereal
1 1/4 cups all-purpose flour (you can mix half whole wheat and half
1/3 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup mashed very ripe bananas (2 to 3 medium)
2/3 cup milk
3 tablespoons vegetable oil
1 egg white

1. Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking
spray, or grease bottoms only of muffin cups.
2. Crush cereal. In large bowl, stir together cereal, flour, brown
sugar, baking powder and baking soda. Stir in remaining ingredients
just until moistened. Divide batter evenly among muffin cups.
3. Bake 18 to 22 minutes or until golden brown
